Gluten-free Diets May Be Contaminated by Gluten
A new study, released in the American Journal of Clinical Nutrition, looked at the amount of gluten being consumed by persons with celiac disease while following a gluten-free diet. The researchers found that subjects were regularly ingesting foods that had been contaminated by gluten in amounts that cause histological damage to the intestines.
