Disease Etiology
C(o)eliac disease (CD) is an immune-mediated, multi-systemic condition triggered by gluten, storage proteins that are present in wheat, barley, and rye among genetically susceptible individuals (1). It is characterized by an inflammatory enteropathy with variable degrees of severity and can include a range of gastrointestinal (GI) and/or systemic symptoms (1).
